How it works!

If you've never bought locker beef before it can seem slightly daunting, but we are here to answer any questions and walk you through the process! First just contact us with any questions and reserve your beef, and wait for the butcher to call!  In the mean time we will deliver your beef to the butcher who will contact you for your cut instructions and let you know when your beef is ready for pickup!

The Breakdown

How much beef do you need? 

​

A typical family of 4 will eat about 300-400 pounds of beef per year.

​

 The exact cuts and percentages will vary somewhat on you cut preferences but you can expect approximately the following: 

​

10-15% quality steaks 

7-9% tenderized steaks 

30% roasts, ribs, stew meat, soup bones, brisket. 

48% ground beef

Price Comparision

Buying bulk beef is a bigger investment than just buying a couple steaks and some burger at the grocery store every week... a much bigger investment, so anyone would rightly ask "is it worth it?"

 

The truth is YES! 

​

Not only is farm raised beef healthier, much tastier, hormone and antibiotic free but it also compares very closely in price to the grocery store, AND our prices don't fluctuate drastically with supply and demand. 

​

Terminology

​

"On the Hoof"

 Means the weight of the entire live cow standing "on hoof". 

 

"Hanging Weight"

 Weight of the beef after being skinned and hung for curing prior to being cut and wrapped.
